Quail Run Creamery

We are in the process of becoming a Grade A Cheese Dairy.  Below you will find pictures of our early stages of cheese making.  There will be much more information in the upcoming months.  It is a difficult decision to make cheese professionally.  It is a long, arduous (not to mention expensive) process to become a licensed cheese dairy.  We will try to keep you updated on our progress.

We start with sweet, delicious milk.  The butter fat content is much higher in the milk of Nigerian Dwarf goats than other goats.  This makes our cheese rich and creamy.

Currently we just use regular gym weights to press our cheeses. 

We are looking forward to purchasing a professional cheese press.  Possibly a C. van 't Riet stainless steel tube cheese press.

Don't worry, the mold is brushed off on a regular basis.
