Quail Run Creamery

We are in the early stages of becoming a Grade A Cheese Dairy.  It is a difficult decision to make cheese professionally.  It is a long, arduous (not to mention expensive) process to become a licensed cheese dairy.  We will try to keep you updated on our progress.

During the day Scott Dominic spends his time working with computers and servers; he's probably what some would call a "standard nerd."  However, he has taken his keen knowledge of science and combined it with his artistic creativity to produce a variety of delicious cheeses.

Scott instructs classes in cheese making a Kookoolan Farms.  If you'd like to take a class, here is a link to their site.

Kookoolan Farms

It all starts with the milk.  Milk from the Nigerian Dwarf breed has much higher butter fat content than other dairy goats.  This creates a rich, flavorful cheese.

Our cheese is made from raw milk and is aged a minimum of 90 days.

Our first goal is to build a new barn with a milk parlor.  Scott "Dominic" designed the barn after visiting several dairies and doing a great deal of research.  We are doing most of the work ourselves in spite of our full-time jobs.  We have hired a few friends and received some volunteer labor as well.
